We've got another feature to share, and this one's close to home. Daily Coffee News, the industry publication from Roast Magazine, wrote about our first permanent cafe here in Vancouver, B.C., and what it took to get there.

From pop-ups to a permanent home

Noct started in late 2024 as a passion project, roasting coffee on the side while I was running an artisan keycap business out of my house. We did pop-ups, online sales, and a handful of events before it became clear our community needed somewhere to actually gather.

That somewhere is 4807 Main St in Riley Park, the longtime home of Matchstick Coffee. As I told Daily Coffee News, "Noct started as a passion project just out of my love for specialty coffee and roasting. I couldn't have imagined what I set out to do growing to the size it has."

A cafe built around fair pay, not tips

The part of the article we're proudest of is the wage model. Our employees are paid a starting wage of $27.25 CAD an hour, which we consider a living wage in Vancouver, with health benefits for full-time staff, five paid days off, five sick days, and vacation time on top. There's no tip jar propping up the difference.

"Their wages should be handled by the company, not by our customers," We told Daily Coffee News. "I believe that caring for and rewarding employees for their hard work builds a culture where people feel valued and want to stay and develop."

We keep costs manageable by doing as much as we can in-house and working with smaller local partners, so we can charge fair prices without cutting corners on staff.

How we roast and source

Inside the 1,750-square-foot space, we run a Stronghold S7X roaster and two Nucleus Link sample roasters for dialing in new coffees. Larger batches, for the cafe, online orders, and wholesale, are roasted on a Diedrich IR-12 at Coffee Roasting Central, a co-roastery here in Vancouver.

On the green coffee side, we buy through importers who prioritize transparency and fair pricing, including Common Goal Coffee, Forward Coffee, Macarena Cafe, and Torrefaction Quebec. We post the origin and the price we paid per kilogram at the bottom of every product page on our site, so you can see exactly where your coffee comes from and what it cost.

The design, and what's next

We wanted the space to feel open and bright, tall windows, white walls, three distinct seating zones, while still carrying Noct's darker, "street meets high fashion" styling through in the details. Behind the bar, baristas pull espresso on a 2-group Kees van der Westen Spirit machine with Ceado grinders and a Zerno Z1, and pour over on Hario Switch brewers with a Weber EG-1 grinder.

Looking ahead, we're not chasing a chain of cafes. The next step on our radar is a dedicated roastery and event space for cuppings and workshops, so we can keep growing the same way we always have: small, focused, and close to the coffee.
