About this Coffee

This coffee really shows off the deep notes of chocolate, plum, and a rich anaerobic wine note that pairs extremely well with the fruit notes in the coffee. I get notes of guava, red fruits, and a hint of ripe banana.

Co-fermentation process:
Sourced from the esteemed El Vergel Estate in Fresno, Tolima, this Colombia Guava Banana coffee showcases the expertise of farmers Elías and Shady Bayter. Premium Red and Yellow Caturra cherries undergo a distinctive 48 to 60-hour anaerobic fermentation, followed by a hybrid drying method combining sun exposure on raised beds with controlled mechanical drying below 45°C. A 45-day stabilization period in GrainPro bags locks in complexity and consistency. The result is a sophisticated cup delivering layered notes of chocolate, plum, guava, and red fruits, balanced with bright citric and tangerine undertones a testament to meticulous natural processing.
