About this Coffee

Sourced from the Granja Paraíso 92 farm, located at elevations between 1900 and 2100 meters in Colombia’s fertile Cauca region, this distinguished coffee is expertly grown by Wilton Benitez. Highlighting the yellow Tabi variety, a rare hybrid prized for its intricate aroma profile and inherent disease resistance, this micro lot undergoes a natural processing method featuring anaerobic fermentation within the cherry. This technique enhances the fruit’s natural sugars and aromatic compounds prior to meticulous drying at 38°C, resulting in a cup that is both vibrant and fruity.

This coffee really shines as a filter, but with some experimenting I've also been really enjoying it as a cortado as well! The fruit notes really shine through and the flavour from the natural anaerobic processing creates some amazing juicy, and deep rich fruit flavours.
